I’m reminded of a long lost friend of mine each time I have bananas that get past the point of wanting to eat them. You know what I mean…brown, mushy, already look like they should be in the trash. You might be thinking to yourself–that’s an odd circumstance to be reminded of someone! Well, this friend, gave me an incredible recipe for banana crumb muffins that is best with those brown, mushy, trashy bananas! He also used to have a bumper sticker on his car that said “Muffins are Ugly Cupcakes”. While I don’t think this muffin qualifies as ugly (let’s face it, some muffins do look somewhat unfortunate), I took the quote and ran with it.
For the muffin batter you’ll need:
- 1 1/2 cups all purpose flour
- 1 t baking powder
- 1 t baking soda
- 1/2 t salt
- 3 over ripe bananas
- 3/4 cup sugar
- 1 egg
- 1/3 cup vegetable oil
For the crumb topping you’ll need:
- 1/3 cup brown sugar
- 2 T all purpose flour
- 1/4 t ground cinnamon
- 1 t butter, softened but not melted
I used my Kitchen Aid Mixer for the muffin batter. I began by combining the bananas, sugar, egg, and oil together on low.
Once combined, slowly add the dry ingredients (flour, baking soda, baking powder, and salt). At this point if you wanted to add some sort of a nut like chopped walnuts or pecans you could certainly do that now. I’ve never tried it, but I’m sure it would taste delicious!
While the dry ingredients are being mixed in (thank you Kitchen Aid), I like to prepare the crumb topping in a small bowl. Add all crumb topping ingredients and mix together. Try to get the butter into several small chunks. It does not need to be melted at all! You want some pieces of butter on each muffin so that it will melt as the muffins bake.
Once the muffin batter and crumb topping are prepared, you’re ready to assemble the muffins! Line your muffin pan with cupcake liners, pour your batter about 2/3 full in each liner, and add a spoonful of the crumb topping on top of the batter. Here they are, all ready to bake in the oven! Bake at 375 degrees for 18-20 minutes.
You’ll know they’re done because you will smell them, trust me! Also, give them the ole’ toothpick test to make sure there isn’t any runny batter hiding in the center. Once they’re ready, those muffins will looks something like this…
These are one of the few baked goods that I make that I don’t feel guilty about eating for breakfast!
So next time you have a few brown, mushy, bananas that you don’t want to eat but feel guilty about tossing in the trash, make some muffins instead!
