{Valentine’s Day Dinner Date with Classico Tomatoes}

{Valentine’s Day Dinner Date with Classico Tomatoes}

With a little one running around, it isn’t always easy {or practical} for my husband and I to go out for a date night.  Don’t get me wrong, we definitely still plan and enjoy our date night’s out {even though they are few and far between these days}, but we’ve learned that when we want to have time just for the two of us, it’s sometimes easier just to plan a little night in after Jackson has gone to bed.

I’ve got the perfect idea for those of you in the same boat this Valentine’s Day.  Why not plan a nice, relaxing meal in with your man and make this delicious {and super easy} recipe for Pizza Margherita from Classico Tomatoes?  Classico Tomatoes products are available at your local Walmart which is usually just a short drive for most people!  The recipe is part of Classico’s “better for you” recipe ideas, and eating healthier meals is  something that my family is striving to do this new year.  The best part about Classico Tomatoes is that they are 100% all-natural and always packed fresh with no preservatives.

Classico Tomatoes

To make Pizza Margherita, you’ll need:

fresh or frozen pizza dough

8 oz. of sliced, fresh mozzarella cheese

1 can {28 oz.} Classico™ Whole Peeled Pear Tomatoes with Fresh Basil

1/4 cup fresh spinach leaves, whole

ingredients

Depending on the type of dough you use, you may need to let it sit out to rise.  If you use a frozen dough, simply follow package directions.  Once preparing the pizza to cook, preheat the oven to 400 degrees.

Roll the dough to fit your pizza stone, mine was about 18″ in diameter.  Crush the tomatoes with your hands and spread evenly over the dough.  I noticed that the tomatoes smelled so fresh, not like they had been canned at all!  Arrange the fresh spinach leaves evenly on the tomatoes, and finally slice the cheese and arrange on top of the spinach.

pizza process

Place the pizza in the oven and cook for approximately 20 minutes, until cheese bubbles and the crust looks golden brown.  {Cook time may vary depending on the type of crust you use.}

While the Pizza Margherita baked, I prepared a romantic table setting, perfect for Valentine’s Day.

table setting

Soon, the pizza was ready, and it smelled absolutely mouthwatering.  Knowing that it was part of their “better for you” recipes made us feel even better about enjoying the entire pizza together!  We sliced it up, prepared a small salad, poured some wine, and enjoyed our night in together!

Pizza Margherita

My husband mentioned that he loved how fresh everything tasted, and I couldn’t have agreed more.  I still cannot believe that we were eating canned tomatoes!  They tasted wonderful and were perfectly seasoned.  Knowing that they were packed fresh with zero preservatives made us feel great about the meal too!

dinner

Pizza Margherita will definitely be a future recipe I use as part of our monthly round up.  I love to add new, simple recipes all the time to keep things interesting at dinner time, and I know that with the huge selection of canned tomatoes from Classico Tomatoes, I’ll be able to do just that!

Enjoy {and Happy Valentine’s Day}!

{Bear Hugs Mix}

{Bear Hugs Mix}

I mentioned earlier this week that Jackson and I went to a play group together.  Well, for the adults I made Chocolate & Oreo Parfaits, but for the kiddos I wanted something a bit more at their level.  Again, I headed to my pantry to see what I could put together that would be perfect for little hands.  I found the following ingredients and got a brilliant {at least I thought so} idea.

ingredients

To make Bear Hugs Mix, you’ll need:

1 box of honey flavored Teddy Grahams

1/2 cup milk chocolate chips

1/2 cup Mallow Bits {think the size that comes in the hot chocolate packets}

bear hugs mix 2

To get started, rip off a few pieces of wax paper and place on a clean counter top.  Dump the entire box of Teddy Grahams onto the wax paper and spread into a single layer.

teddy grahams

Melt 1/2 cup of milk chocolate chips according to package directions.  Using a spoon, drizzle the chocolate all over the Teddy Grahams.

drizzle chocolate

Before the chocolate begins to harden, sprinkle 1/2 cup of the Mallow Bits over the chocolate bears.

Note: I found the jar of Mallow Bits at Wal Mart, but have also seen them at my regular grocery store as well.  Look in the hot chocolate & coffee aisle.

marshmallows

Let the mix dry on your counter for at least an hour so that the chocolate hardens and the mallows stick to the bears.  You can store Bear Hugs Mix in an airtight container for about a week.

To share with the kiddos I put a small scoop into snack sized Ziploc bags {since we were travelling to another house}.  You could also use a cute cupcake liner to share the snack.

This little mix would also be so cute for a class Valentine’s Day party!

Enjoy!

{Chocolate & Oreo Parfait}

{Chocolate & Oreo Parfait}

I recently was in charge of bringing dessert to a play group that Jackson and I went to together last week.  I wanted to do something different, something I’d never made before.  I also didn’t want to have to go out and buy all kinds of ingredients.  After searching through {and organizing} my pantry, I discovered I had several packages of chocolate pudding, just begging waiting to be eaten.  I soon came up with the idea for individual chocolate and Oreo parfaits!

chocolate oreo parfait

To make Chocolate & Oreo Parfait’s you’ll need:

1 package chocolate pudding (I had the larger box)

milk (according to pudding package directions)

1 container Cool Whip

10-15 Oreo Cookies

small mason jars

{recipe makes about 8 small mason jars}

materials

To get started, prepare your chocolate pudding according to package directions.  It shouldn’t take too long to set once you put it in the refrigerator.  While the pudding sets, set the Cool Whip out to thaw if it was in your freezer, wash out the mason jars well, and crush the Oreos using a food processor.  I used my Tupperware Quick Chef….it’s such a great product!

crushed oreos

I also mixed about half of the prepared pudding with half of the container of Cool Whip to add another layer to the finished parfaits.

After about 10 minutes, you should be ready to start assembling!

assemble

It’s up to you how you want to assemble each parfait.  For the most part I added a layer of crushed cookies between each layer of chocolate and/or Cool Whip.

Let me tell you, these were a big hit, and oh so yummy!  The best part was how easy they were to take in the car as well.  I just set them at the bottom of a reusable grocery bag with the lids tightly secured, and they were good to go!  These would also make a cute treat for Valentine’s Day next week.  You could add some red or pink sprinkles to the top to make them a bit more festive.

{Crockpot Cashew Chicken}

{Crockpot Cashew Chicken}

I’ve got a great, no hassle meal for you to cook tonight {or one night this week}.  I bet you already have a lot of the ingredients, and I’m sure you own a crockpot.  The rest is easy peasy and very yummy!

I was inspired by this recipe I found on Six Sisters’ Stuff, but as usual tweaked it a bit to fit my family’s likes.

Ingredients for Crockpot Cashew Chicken

1 boneless skinless chicken breast per family member

1/4 c flour

1/4 tsp black pepper

1 T extra virgin olive oil

1/4 cup soy sauce

2 T rice wine vinegar

2 T ketchup

1 T brown sugar

1 clove minced garlic

1/4 cup ginger dressing

1/4 tsp red pepper flakes

1/3 cup cashews

Ingredients

That Ziploc bag in the bottom right corner of the photo is the chicken, cut up and tossed in the flour/pepper mixture {no one wants to really see raw chicken, do they?!}.

Once the chicken is coated with the flour/pepper mixture, heat the extra virgin olive oil in a skillet and brown the chicken pieces for about 2 minutes on each side.  It will not completely cook through, it just gives it a bit of a crispy coating.  Add your chicken to the crockpot.

crockpot

Combine the remaining ingredients in a small bowl {except for the cashews} and pour the mixture over the chicken in the crockpot.  Cook on low for about 3 hours.

Mixture

Once your chicken is ready, prepare some brown rice and a yummy veggie to serve on the side such as broccoli.  Serve the chicken on top of a bed of rice and sprinkle with some cashews for a salty crunch.

Crockpot Cashew Chicken

It’s the perfect meal to serve after a cold winter’s day and the red pepper flakes give it a subtle spice that tastes delicious.  Red pepper flakes might be my favorite ingredient to use right now, and I really just discovered it last year.  Boy, was I missing out!

Enjoy!
