Sweet Tea Syrup

With the warmer weather finally making it’s way to our neck of the woods, I’ve found that sometimes I want something a little more than plain old water.  Don’t get me wrong, I drink tons of that daily, but sometimes you want a sweet treat, ya know?  One of my favorite spring and summer time drinks to enjoy is sweet tea.  And just because some people like theirs sweeter than others, I’ve got the perfect solution…sweet tea syrup!

Easiest recipe ever people!

Brew your iced tea according to package directions.  I love to use the Lipton Cold Brew tea, and brew enough for a big pitcher.

To make the sweet tea syrup, boil 4 cups of water with 1-2 cups of white sugar {depending on how sweet you want it to be}.  After the mixture boils for about 2 minutes, cool completely in the refrigerator.  I like to keep ours in a tall mason jar.

I’ve tried {honestly I have} lately to buy more gluten free and organic products for my family.  I consider a shopping trip very successful when most of the products I purchase are fresh, wholesome, and grown from the ground.

But, sometimes a mom just wants some cookies.  I’ve got a serious weakness for those ready-made cookie dough tubs and rolls that Pillsbury so conveniently packages for me.  You can imagine my surprise {and joy} when I discovered that my friends at Pillsbury have taken the gluten free plunge too!

Just in time for some serious cookie baking this holiday season, I found Gluten Free Chocolate Chip Cookie Dough by Pillsbury at my local grocery store.

After perusing Pillsbury’s extensive recipe suggestions on their website, I decided to put my own spin on a chocolate and sea salt cookie.

To make about two dozen you’ll need:

1 tub of Gluten Free Chocolate Chip Cookie Dough by Pillsbury

1/2 cup semi sweet chocolate chip cookies

1/3 cup chopped pecans

2 t of coarse sea salt {more or less depending on how salty you like your cookies}

Before you assemble these cookies, you of course will need to bake them.  Simply plop a spoonful of cookie dough onto an ungreased cookie sheet, bake according to package directions, and let them cool for at least 10 minutes.

{please excuse the grossness that is my cookie sheet…I might need to request a new one from Santa}

As soon as the cookies cooled, I melted the semi-sweet chocolate chips {also according to package directions}, and I drizzled the chocolate over the baked cookies.  Before the chocolate hardened, I sprinkled the chopped pecans and some coarse sea salt over each cookie.

I’ve already asked Santa which cookies he’d prefer on his cookie plate this year, and he has requested these!

So, why gluten free?!

1.  All three varieties come in convenient, refrigerated containers and will be available at major grocery retailers and super centers.

2.  Instead of thawing frozen gluten free bread products or combining dry-mix items, you can just use the refrigerated dough and eliminate extra preparation.

3.  In addition to being convenient, the new dough has a delicious taste the whole family will appreciate.

Loving the Holiday Cheer

We were fortunate enough to travel to Ohio this past week for Thanksgiving to spend time with my side of the family including my parents and grandparents.  I was so happy that my sons got the chance to spend that precious time with them and that my two year old got his first taste of playing in the snow {ever}!

Once we got home, I was VERY eager to start decorating for Christmas, but I had to put that on hold and head to Walmart for a few essentials.  We were completely, and I mean completely, out of food.

At the top of my grocery list?  I’ll be honest…it was milk.  I’ve got a milk-loving toddler, remember?

The second item I had to grab?  Some Coffee-mate creamer in Peppermint Mocha.  My husband and I LOVE our coffee in the winter months, especially with the cooler weather we’ve been having in Georgia.  I was so excited to try this special holiday flavor, especially while we decorated the house together today!

Let me tell you, it did not disappoint.  He was wary at first, thinking it would taste very overpowering, but it wasn’t at all.  The peppermint mocha flavor added a subtle touch of peppermint to our cups and the perfect amount of sweet cream.

My opinion?  Christmas in a cup! And the perfect way to connect as a family and put us completely in the Christmas spirit.

While we enjoyed our peppermint kissed coffee, we managed to make quite a bit of progress on the Christmas decorating front, including getting our tree up!

We had to stick with non-breakable, and for the most part kid-safe ornaments again this year.  I’m guessing that’s just how it’s going to be for the next few Christmases, but I wouldn’t have it any other way!

I also managed to work on a few Christmas crafts that you’ll see in the coming weeks on the blog.

I may or may not have eaten my fair share of these cookies while decorating today too.  Nothing goes better with peppermint flavored coffee than some delicious Christmas cookies, right?
