{Chocolate Dipped Caramel Pretzels}

Today I want to share with you a delicious dipped pretzels recipe: Chocolate Dipped Caramel Pretzels!

Salty + Sweet + Caramel = Divine in my opinion!

And the best part is that they are so easy to make too!

Caramel Chocolate Dipped Pretzels

You Will Need:
Pretzels
Kraft Caramels (or similar)
Chocolate Chips
Vegetable oil

Directions

Melt caramels according to package directions.
Dip approximately half of the pretzel into the caramel and let it set and harden on parchment paper (wax paper or foil works well too)
Melt chocolate chips with a little vegetable oil until smooth.  (Check out my post on how to melt chocolate for dippinghere.)
Dip pretzel into melted chocolate and allow to harden.

These are perfect to package up as gifts but are also a tasty treat that I couldn’t keep my family’s hands off!

{Chicken Meatballs with Kraft Fresh Take}

One of my most favorite no-fuss meals to make during the week is Chicken Meatballs with Tortellini.  I’m such a sucker for a good pasta dish, and who doesn’t love a good meatball?!  After browsing my local Walmart last weekend, I was excited to put a new spin on my classic meatball recipe by using Kraft Fresh Take Italian Parmesan Cheese & Breadcrumb mix.

The meal kit was located in the dairy case, near all of the shredded cheeses.  There were quite a few varieties to choose from as well, and I’m excited to try them out in some other dishes soon.  Cheddar Jack & Bacon sounds right up my alley!  If you’d like to see my entire shopping trip at Walmart, click here.

Once I got home, I modified my original recipe to include Kraft Fresh Take.

To make Chicken Meatballs with Tortellini, you’ll need the following ingredients:

1 lb ground chicken {if you prefer ground beef or ground turkey use that instead}

Kraft Fresh Take Italian Parmesan Cheese & Breadcrumb Mix

1 egg

1/2 teaspoon salt

1 teaspoon brown sugar

1 teaspoon onion powder

2 teaspoons Worcestershire Sauce

1 teaspoon oregano

1 teaspoon thyme

1 teaspoon fresh minced garlic

To make the meatball mixture, add all ingredients into a large bowl.  You’ll want to use all of the breadcrumbs from the Kraft Fresh Take Kit and 1/2 cup of the Parmesan cheese.  Mix together with clean hands, form into meatballs, and set in a greased, glass baking dish.

Cook @ 375 for approximately 50 minutes.

When the meatballs have about 15 minutes to go in the oven, warm your favorite sauce and boil water for tortellini {or whatever type of pasta you’d prefer}.

I like to prepare a fresh side salad to go with any Italian meal.  When I think pasta, I always want a salad to go with it for some reason!

I used the remaining Parmesan from the Kraft Fresh Take Kit to add to the salad.  The cheese was so fresh!

Soon, I had a delicious, home-cooked meal in less than an hour, ready for my family to enjoy at the end of a long day.

Another reason why I love making this is because I always have just enough left over for a yummy lunch the next day!

I don’t know about you, but I’m all about ease and convenience lately when it comes to preparing meals for my family.  It seems we’ve all of a sudden got a lot going on these days, and finding the time to fit in a healthy meal needs to remain a priority between all the hectic-ness that is our lives.  Luckily, Minute Rice has me {and YOU} covered!  Hello, delicious rice that cooks in 5 minutes…yes, please!  It’s so easy to prepare and then pair with a quick meal, and it makes me feel like I’m giving my family a great meal in between all of weekend and evening obligations.

I found several delicious recipes on the Minute Rice website that I’m eager to try out, but on this particular night, I went with Cashew Chicken Dijon, sounds fancy, huh?!

To make Cashew Chicken Dijon, you’ll need:

2 cups Minute White Rice, uncooked

2 T olive oil

1 medium green bell pepper, cut into strips

1 medium red bell pepper, cut into strips

1 lb. boneless, skinless chicken breast, cut into thin strips

1 cup chicken broth

1/4 cup dijon mustard

1 t cornstartch

1/4 cup cashews, coarsely chopped

ingredients

Heat 1 tablespoon olive oil in a large skillet over high heat. Add bell peppers; cook and stir until crisp-tender. Remove from skillet; cover to keep warm.

Add remaining 1 tablespoon olive oil and chicken to skillet; cook and stir until chicken is cooked through. Remove from skillet; cover to keep warm.

While the chicken cooked, I prepared the Minute Rice by boiling water, specific to package directions.  Total time was maybe 7 minutes, tops!

Mix the broth, mustard, and cornstarch. Add to skillet; cook on medium-high heat until thickened, stirring constantly. Return chicken and peppers to skillet; cook and stir 2 minutes or until heated through. Stir in cashews. Serve over cooked Minute rice.

Soon we had a delicious, healthy, and super convenient meal to sit down and enjoy as a family.

I feel like a big theme for my posts the past week has been all about date night ideas, perfect for staying in with your husband.  You see, when you’ve got a toddler {and not a lot of time to do a whole lot of anything}, it’s nice to be able to just put the little one to bed and have a date at home.

An idea came to me after visiting my local Walmart and discovering the Starbucks #DeliciousPairings they have with The Bakery at Walmart items.  Why not get some delicious Starbucks Dark Caffe Verona and some Turtle Brownies for our Valentine’s Day dessert?!

Once I came home, I began preparing my romantic meal, avocado & parmesan chicken , caesar salad and some delicious red wine.

After a spectacular dinner, we were able to enjoy Starbucks Dark Caffe Verona and a couple of delicious Turtle Brownies from the Bakery at Walmart.  They were definitely a delicious pairing, indeed!

On it’s own, the coffee was outstanding.  It had hints of both dark and milk chocolate flavors and caramelized sugar.  Paired with the Turtle Brownies, the flavor of the dark chocolate really stood out to both of us.

We like to purchase Starbucks in their stores, and also frequently brew our own coffee at home.  Ironically we had never bought Starbucks home brew coffees before, but I can tell you that it will definitely be our brand of choice in the future.  The in-home brew definitely met our expectations and made us feel like we were on a little dessert date at a nice Starbucks restaurant.  I can see this becoming a weekly date night ritual for the two of us now!

With a little one running around, it isn’t always easy {or practical} for my husband and I to go out for a date night.  Don’t get me wrong, we definitely still plan and enjoy our date night’s out {even though they are few and far between these days}, but we’ve learned that when we want to have time just for the two of us, it’s sometimes easier just to plan a little night in after Jackson has gone to bed.

I’ve got the perfect idea for those of you in the same boat this Valentine’s Day.  Why not plan a nice, relaxing meal in with your man and make this delicious {and super easy} recipe for Pizza Margherita from Classico Tomatoes?  Classico Tomatoes products are available at your local Walmart which is usually just a short drive for most people!  The recipe is part of Classico’s “better for you” recipe ideas, and eating healthier meals is  something that my family is striving to do this new year.  The best part about Classico Tomatoes is that they are 100% all-natural and always packed fresh with no preservatives.

To make Pizza Margherita, you’ll need:

fresh or frozen pizza dough

8 oz. of sliced, fresh mozzarella cheese

1 can {28 oz.} Classico™ Whole Peeled Pear Tomatoes with Fresh Basil

1/4 cup fresh spinach leaves, whole

ingredients

Depending on the type of dough you use, you may need to let it sit out to rise.  If you use a frozen dough, simply follow package directions.  Once preparing the pizza to cook, preheat the oven to 400 degrees.

Roll the dough to fit your pizza stone, mine was about 18″ in diameter.  Crush the tomatoes with your hands and spread evenly over the dough.  I noticed that the tomatoes smelled so fresh, not like they had been canned at all!  Arrange the fresh spinach leaves evenly on the tomatoes, and finally slice the cheese and arrange on top of the spinach.

Place the pizza in the oven and cook for approximately 20 minutes, until cheese bubbles and the crust looks golden brown.  {Cook time may vary depending on the type of crust you use.}

While the Pizza Margherita baked, I prepared a romantic table setting, perfect for Valentine’s Day.

Soon, the pizza was ready, and it smelled absolutely mouthwatering.  Knowing that it was part of their “better for you” recipes made us feel even better about enjoying the entire pizza together!  We sliced it up, prepared a small salad, poured some wine, and enjoyed our night in together!

My husband mentioned that he loved how fresh everything tasted, and I couldn’t have agreed more.  I still cannot believe that we were eating canned tomatoes!  They tasted wonderful and were perfectly seasoned.  Knowing that they were packed fresh with zero preservatives made us feel great about the meal too!

Pizza Margherita will definitely be a future recipe I use as part of our monthly round up.  I love to add new, simple recipes all the time to keep things interesting at dinner time, and I know that with the huge selection of canned tomatoes from Classico Tomatoes, I’ll be able to do just that!
