{Easy Skillet Potatoes}

This recipe is not only super easy to make, but oh, so delicious!  The best part?  I think it’s perfect as a side dish for so many different kinds of meals.  I served this with chicken and salad for dinner, but it would be the perfect addition to a big family style breakfast or brunch as well!

Skillet Potatoes

1 1/2 T bacon fat or olive oil

3-4 red skin potatoes

1/2 cup onion, chopped

1/2 cup green bell pepper, chopped

salt & pepper to taste

seasoning salt

Yes, I realize I said “bacon fat” as an ingredient.  If you aren’t one to keep a jar of bacon fat in your fridge, then just use olive oil!  I know it may sound a bit disgusting to some, but it’s honestly the BEST way to cook bacon quickly, plus it’s bad to dump bacon fat down your sink…didn’t your mama teach you that?!

To get started, wash and pat dry your potatoes and green pepper.  Chop everything!

Don’t all those chopped veggies look beautiful?

Heat a large skillet with either the bacon fat (until melted) or the olive oil.  Add all the veggies at once and make sure the heat is turned to medium-high.

Sprinkle with salt, pepper, and seasoning salt.  Toss the veggies until they all appear evenly covered by oil and seasoning.

Let it sit, uncovered and without turning or stirring to brown the underside of the veggies.  Keep an eye on it and occasionally give the entire skillet a stir.

Continue frying until the potatoes and veggies are tender and you reach the desired brown/caramelized color.

Don’t cover while you cook.  Once it’s looking like your dish is cooked, make sure to taste test to ensure the flavor is right.  Add more salt, pepper and/or seasoning salt as needed!

Right before you serve the side dish, add some fresh and finely chopped herbs!  I added fresh rosemary from my garden!

    Yum! I do something similar but use a red pepper and add sliced smoked turkey or chicken sausage to make it a one pan meal. If I’m in a hurry (I ususally am!), I cook the chopped potatoes in the microwave for a few minutes to start getting them soft.

    It’s funny because tonight I’m doing baked BBQ chicken and an Italian salad and I was thinking what starch I could do with it! Skillet potatoes it is! Except for the sad fact that when I looked in my closet I didn’t have any red potatoes 🙁 Only russet! But I’m craving them now anyway, so russet it is!
